Chef, restaurateur, and philanthropist José Andrés has a new travel show, and it’s all about his homeland. Across José Andrés and Family in Spain’s six-episode run, the food magnate and El Bulli alum takes his American-born daughters Carlota, Inés, and Lucía to explore the cuisines of Spain, the country where he was born and received his culinary education.

Like any good travel show, Andrés’s new program—streaming December 27 on Discovery+—doesn’t just entertain. Instead, it offers a series of great dining itineraries for many of the Iberian country’s most beloved food destinations, including Barcelona, Madrid, and Andalusia, for a delicious survey of the world’s tapas capital.

There is no trait that distinguishes humans from all other mammals more clearly than the way we walk. Human habitual bipedalism – obligatory walking on two legs – has long been a defining trait of our species, as well as our ancestors as far back as 4.5 million years ago.

Science’s growing understanding of chimpanzee culture, communication and emotion may have blurred the understanding of “distinctly human”, but our obligatory bipedalism has stood the test of time.

Why, when, and where bipedalism evolved remains debated, however. Numerous evolutionary pressures have been proposed. Most are about the economics and energy use of walking on two legs (bipedalism is far more efficient than quadrupedalism).

Other theories describe the advantages of carrying objects. Bipedalism frees the hands to do interesting things like make and use tools and reach for fruit. It also enables us to see over tall grass.

But almost all the theories suggest that bipedalism is an adaptation to getting around on land. It is clear that early bipeds evolved when savanna grasslands became increasingly common as forests retreated 4-8 million years ago. Walking on two legs made it easier to forage and travel on the ground.

Challenges to theory

Where:

At the southern tip of New York State, east of New York City. Long Island is divided into four counties – Queens and Kings (Brooklyn), which fall under New York City’s jurisdiction, and Nassau and Suffolk. The east end of the island in Suffolk County is made up of the North and South Forks.

Why go:

It takes barely any time at all to get from the cacophonic chaos of New York City to the peace and calm of Long Island. The Long Island Rail Road provides easy access to many of the most desirable towns on the map, so you can go for a day trip or a short getaway from the city that never sleeps.

Long Island is perhaps best known to Kiwis as the home of the Hamptons, the beach playground of Manhattan’s rich and famous. San Antonio landmark dives deeper with new wild caving experience

Caving for the first time may have adventurers praying to their saint of choice (that would be Barbara, FYI, patron saint of miners), but guides on a new tour at Texas’ Natural Bridge Caverns are ready to shepherd newbies from a more earthly perspective.

The new St. Mary’s Adventure Tour is an expansion of the offerings at the iconic Texas attraction and perfect for people who have never tried their hand at caving. It also offers access to parts of the caverns never before seen by guests.

“This wild area in our cavern has always been one of our favorites,” says Natural Bridge Caverns president Brad Wuest in a press release. “The challenge has been that experiencing it also requires some specialized equipment and training. Now … we have the equipment and rigging in place to make the experience accessible to guests who are ready for adventure.”

The existing expedition, called the Discovery Adventure Tour, is more of a challenge, with “muddy and tight crawl ways” (stomach churn) that take two-and-a-half to three hours to explore. The St. Mary’s tour is more upright, with no crawling and a little more climbing, for an hour less of total exploring. The company says both are good for beginners, who will wear protective equipment that can be hooked up to safety lines anchored to the rock.

Sections of the new tour have never been seen by modern guests of Natural Bridge Caverns, but this cave isn’t newly explored. The team estimates, from evidence in this area of the cave, that explorers have been visiting as early as the 1950s. Visitors can see crystals, curtains of sediment called flowstone, and spiderwebby “boxwork” from ancient water erosion.

“Experiencing these passages just expands your appreciation for the astonishing wonder of the natural world,” says vice president and expedition team member Travis Wuest. “Our hope is these experiences will inspire our guests to learn about and then advocate for protection and responsible stewardship of these delicate environments.”

Sustainability is king in this tiny mountain nation – here’s what other countries can learn from it

A common question about Bhutan is, where is it? Wedged between India and Tibet, this Himalayan kingdom has flown under the radar of mass tourism for decades.

That’s partly because Bhutan has a unique ethos towards tourism. When this isolated country finally opened to tourists in 1974, it adopted a ‘high value, low impact’ policy. It means there are strict controls on how visitors travel in Bhutan – including how much it costs.

Ruled by principles of Buddhism rather than business, Bhutan is a country that prioritises Gross National Happiness over Gross Domestic Product. And this idea filters down into every aspect of tourism.

To date, Bhutan is also the only carbon negative country in the world.

On 23 September this year, the country will finally reopen to tourists without quarantine for the first time in more than two years.

So what can other countries learn from the tourism model in this enigmatic, high-altitude nation?

The environment is king

Environmental conservation is one of the four pillars of Bhutan’s Gross National Happiness philosophy, recognising the importance of nature for its citizens’ wellbeing.

Landscape protection is written into the constitution. It is mandated that at least 60 per cent of Bhutan’s land must be covered in forest at all times – and WWF says Bhutan has consistently achieved this. At the moment, forest coverage is around 70 per cent.

Overall, more than 50 per cent of the country is protected. This is the largest percentage of any Asian country, according to WWF.

Between its high-altitude mountain peaks and alpine forest valleys, Bhutan has carved out a 5 million acre network of protected areas. Within these boundaries, native wildlife such as endangered royal Bengal tigers, snow leopards and elephants are thriving.

Chinese restaurateur Jing Wei makes it a point to explain the style of cuisine and his Chinese culture when he sees someone new stepping into his Sichuan hot pot eatery Xiaolongkan.

A new Asia New Zealand Foundation survey has found the number of New Zealanders feeling warm about China has fallen to a record low.

But it also found that food and travel remained the most popular Asia-related interests for Kiwis.

Wei said the number of non-Chinese diners coming to his speciality restaurant had risen from 5 per cent to about 20 per cent since it opened three years ago.

“Whatever New Zealanders think of China, I find Kiwis are becoming more open to different styles of Chinese food. I take every opportunity to share with customers the customs, history and culture behind the style of food we serve,” he said.

“A lot of what we know of other cultures is formed by what we read in the media, but for many the real experiences they have with another culture is mainly through their food.

“So I feel it is important that I use my food as a way to promote better understanding of our Chinese heritage.”

Largely due to recent coverage of China’s role in the Pacific, the 2020 Perceptions of Asia and Asian Peoples report found almost six in 10 – the highest ever number – saw China as a threat and just 13 per cent regarded China as a friend.
